🍅🍘 Tomato & Kenkey Porridge (7+ months)
Ingredients:

2–3 tablespoons soft mashed white kenkey

1 small tomato (peeled and blended or finely chopped)

1 tsp finely chopped onion

½–1 cup water, breast milk, or baby-safe broth
-
A drop of vegetable oil or unsalted butter (optional)
👩🍳 Instructions:

Prepare Kenkey Base:

Mash kenkey with a little warm water or breast milk until smooth and soft.

Make Tomato Sauce:

In a small pan, sauté onions and tomatoes in a drop of oil or butter until soft.

Add a splash of water or broth and simmer for 2–3 minutes.

Combine & Simmer:
-
Stir the tomato sauce into the mashed kenkey.

Simmer on low heat for 2–3 minutes to blend flavors and achieve porridge-like texture.

Cool & Serve:

Allow to cool before serving in a baby bowl.
