🥬🍅 Veggie Jollof Rice (10m+)

Ingredients:

  • 1/2 cup soft cooked rice (preferably brown or white, mashed slightly)

  • 1/4 cup tomato puree (fresh blended tomato or cooked tomato paste)

  • 1 tablespoon onion (finely chopped)

  • 1/4 cup soft vegetables (carrot, spinach, green beans – finely chopped)

  • 1 teaspoon vegetable or palm oil

  • A little water or baby-safe broth


Instructions:

  1. Prepare the base
    In a small saucepan, heat oil and sauté onions until soft. Add tomato puree and cook for 5 minutes.

  2. Add vegetables
    Stir in chopped veggies and a splash of water. Cook until veggies are very soft (about 5–7 minutes).

  3. Add rice
    Stir in soft cooked rice and mix well. Simmer together briefly to combine flavors.

  4. Cool & serve
    Let the jollof cool to a safe temperature before feeding.
