🥬🍅 Veggie Jollof Rice (10m+)
Ingredients:

1/2 cup soft cooked rice (preferably brown or white, mashed slightly)

1/4 cup tomato puree (fresh blended tomato or cooked tomato paste)

1 tablespoon onion (finely chopped)
-
1/4 cup soft vegetables (carrot, spinach, green beans – finely chopped)

1 teaspoon vegetable or palm oil

A little water or baby-safe broth
Instructions:

Prepare the base
In a small saucepan, heat oil and sauté onions until soft. Add tomato puree and cook for 5 minutes. -
Add vegetables
Stir in chopped veggies and a splash of water. Cook until veggies are very soft (about 5–7 minutes). -
Add rice
Stir in soft cooked rice and mix well. Simmer together briefly to combine flavors. -
Cool & serve
Let the jollof cool to a safe temperature before feeding.
