🥚🍠 Egg & Cocoyam Soft Jollof (9+ months)
Ingredients:

3 tablespoons soft-cooked cocoyam (boiled and mashed)

1 small egg (hard-boiled and mashed or scrambled)

1 small tomato (blended or finely chopped)

1 tsp finely chopped onion
-
A splash of baby-safe chicken broth or water
-
A drop of vegetable oil or unsalted butter (optional)
👩🍳 Instructions:

Prepare Cocoyam Base:

Boil cocoyam until very soft.

Mash to a smooth consistency, adding a little broth or water to loosen it.

Cook the Soft Jollof Sauce:

In a small pan, sauté onions and tomatoes in a drop of oil or butter.

Cook until soft and slightly thickened.

Add in mashed or scrambled egg and stir gently to combine.

Combine & Simmer:

Stir the jollof-style egg sauce into the mashed cocoyam.

Simmer together on low heat for 2 minutes for flavors to blend.
