🥚🍠 Egg & Cocoyam Soft Jollof (9+ months)

Ingredients:

  • 3 tablespoons soft-cooked cocoyam (boiled and mashed)

  • 1 small egg (hard-boiled and mashed or scrambled)

  • 1 small tomato (blended or finely chopped)

  • 1 tsp finely chopped onion

  • A splash of baby-safe chicken broth or water

  • A drop of vegetable oil or unsalted butter (optional)


👩🍳 Instructions:

  1. Prepare Cocoyam Base:

    • Boil cocoyam until very soft.

    • Mash to a smooth consistency, adding a little broth or water to loosen it.

  2. Cook the Soft Jollof Sauce:

    • In a small pan, sauté onions and tomatoes in a drop of oil or butter.

    • Cook until soft and slightly thickened.

    • Add in mashed or scrambled egg and stir gently to combine.

  3. Combine & Simmer:

    • Stir the jollof-style egg sauce into the mashed cocoyam.

    • Simmer together on low heat for 2 minutes for flavors to blend.

  4. Cool & Serve:

    • Let it cool slightly before serving.
