🍅🍘 Tomato & Kenkey Porridge (7+ months)

Ingredients:

  • 2–3 tablespoons soft mashed white kenkey

  • 1 small tomato (peeled and blended or finely chopped)

  • 1 tsp finely chopped onion

  • ½–1 cup water, breast milk, or baby-safe broth

  • A drop of vegetable oil or unsalted butter (optional)


👩🍳 Instructions:

  1. Prepare Kenkey Base:

    • Mash kenkey with a little warm water or breast milk until smooth and soft.

  2. Make Tomato Sauce:

    • In a small pan, sauté onions and tomatoes in a drop of oil or butter until soft.

    • Add a splash of water or broth and simmer for 2–3 minutes.

  3. Combine & Simmer:

    • Stir the tomato sauce into the mashed kenkey.

    • Simmer on low heat for 2–3 minutes to blend flavors and achieve porridge-like texture.

  4. Cool & Serve:

    • Allow to cool before serving in a baby bowl.
