🍅🍠 Tomato & Cocoyam Blend (7 Months +)

Ingredients (1–2 baby portions)

  • ½ cup cocoyam, peeled and diced

  • ½ medium tomato, peeled and deseeded (to reduce acidity)

  • ¼ small onion, finely chopped (optional for mild flavor)

  • ¾ cup water or homemade vegetable stock (no salt)

  • 1 teaspoon olive oil or unsalted butter


Preparation Steps

1. Cook the Cocoyam

  • Add cocoyam and water/stock to a small saucepan.

  • Simmer for 8–10 minutes until very soft.

2. Add Tomato (and Onion if Using)

  • Add chopped tomato and onion to the pot.

  • Continue cooking for 2–3 minutes until tomato is softened.

3. Blend or Mash

  • For Stage 1: blend until completely smooth.

  • For Stage 2: mash until soft with small chunks.

4. Add Healthy Fats

  • Stir in olive oil or butter before serving.


Storage

  • Refrigerate for up to 24 hours.

  • Freeze in baby-sized portions for up to 1 month.
