Ingredients:

2โ3 tablespoons soft mashed white kenkey

1 small fresh tomato (blended or finely chopped)

1 tsp finely chopped onion

A drop of vegetable oil or unsalted butter (optional)

2โ3 tablespoons baby-safe broth or water

A pinch of baby-friendly spice (optional, e.g., nutmeg)

Mash the Kenkey:

Remove leaves or wrapper.

Mash kenkey until smooth and soft with a splash of warm water or broth.

Prepare Tomato Jollof Sauce:

In a small pan, sautรฉ onions and blended tomato with a drop of oil or butter.

Simmer gently for 3โ5 minutes until soft and flavorful.

Add a splash of broth or water to make it saucy and light.

Combine:

Mix the tomato sauce into the mashed kenkey.

Stir well until smooth and uniform.

Cool & Serve:
