🍠 Chicken & Rice Soft Jollof (7 Months +)
Ingredients (1–2 baby portions)

2 tablespoons uncooked rice (short-grain or broken rice cooks softer)

2 tablespoons boneless chicken breast, chopped (or 1 teaspoon Dr. Annie Chicken Powder)

1 small sweet potato, peeled and diced

1 small tomato, peeled and chopped (optional: deseed for less acidity)

¼ small onion, finely chopped (optional for mild flavor)

½ cup water or homemade chicken stock (no salt)
-
½ teaspoon vegetable oil or olive oil
Preparation Steps
1. Prepare the Chicken

If using fresh chicken, finely chop or mince.

In a small pot, add chicken and oil, then cook over low heat for 2–3 minutes until white and no longer pink.
2. Add Vegetables & Rice

Add onion, tomato, sweet potato, and rice to the pot.

Stir gently to coat with oil and chicken juices.
3. Cook Until Soft

Pour in water/stock, bring to a gentle boil, then reduce heat.

Cover and simmer for about 15 minutes until rice and vegetables are very soft.
4. Blend or Mash

For a smooth stage-1 puree: blend everything until creamy.

For stage-2 texture: mash with a fork or potato masher, leaving small soft pieces.
5. Serve Warm

Add a few drops of olive oil before serving for healthy fats.
Storage

Refrigerate in an airtight container for up to 24 hours.

Freeze in small baby-portion cubes for up to 1 month.
